Here's what you'll need:

1 pound ground chicken

1/2 cup diced bell pepper

1/2 cup diced celery

1/2 cup diced onion
-
1/4 cup chopped fresh parsley

1 egg
-
1 cup Buffalo sauce; divided
-
1 cup ranch or blue cheese dressing; divided

1 cup bread crumbs
-
1 teaspoon garlic powder
-
1 teaspoon smoked paprika
-
Salt and pepper to taste

Blue cheese crumbles for topping
Directions:

In a pan over medium heat, add peppers, onions and celery, season with salt and pepper, cook until softened; about 5 minutes. Transfer to a bowl to cool

In a large bowl add chicken, egg, bread crumbs,

parsley, garlic powder, paprika, 1/2 cup ranch or blue cheese, 1/2 cup buffalo sauce, and once cooled add the pepper, onion celery mixture

Mix until combined. Best way to do this is with your hands. Do not over mix otherwise your meatloaf will be tough not moist

Turn meatloaf mixture out into a greased baking sheet

Form into loaf shape

In a small bowl, whisk remaining Buffalo sauce and ranch

Brush over meatloaf

Bake at 350°F for 15 minutes

Remove from oven, top with blue cheese crumbles
-
Back in oven and bake for another 5-10 minutes until internal temperature reaches 165°F (If not using blue cheese crumbles then just leave the meatloaf in the oven the entire cook time)

Remove from oven, let rest for 5 minutes before slicing and enjoying!
