Chicken "Faux" Pho

Indulge in a bowl of fragrant faux chicken pho, a noodle soup that warms the soul. This dish features tender poached chicken served over delicate rice noodles, all immersed in a savory, aromatic broth.

Here's what you'll need:

  • 1 onion; cut in half
  • 3 inch ginger root; cut in half lengthwise or into thick slices
  • 1 rotisserie chicken
  • 1 tablespoon coriander seeds
  • 1 whole clove
  • 1 star anise
  • 1 tablespoon sugar
  • 4-6 scallions
  • Handful of cilantro
  • 3 cups chicken broth
  • 12 cups water
  • Rice noodles- prepared according to package directions
  • Toppings: cilantro, basil, sliced jalapeño, bean sprouts, sriracha, soy sauce

Directions:
1. Roast onion and ginger - there are a few ways you can do this! Under the broiler, using the open flame on your stove, or in the oven at 400° for 20 minutes flipping once half way through
2. While the onion and ginger are roasting, toast your spices and the white part of the green onions (takes about 3 minutes on medium heat)
3. Add in broth, water, the roasted onion and ginger, sugar, and the carcass of the rotisserie chicken
4. Bring to a boil, reduce heat to a simmer, simmer for 30-45 mins…timing is up to you and how hungry you are ;)
5. Strain the broth through a fine mesh strainer
6. Return broth back to pot
7. Add in shredded chicken, once chicken is heated through pour into serving bowl
8. Add rice noodles into bowl while broth is steaming hot
9. Add toppings of choice and enjoy!
