Chicken Tortilla Soup

Chicken tortilla soup. Such an easy crowd pleasing weeknight meal that comes together in 30 minutes!

Here's what you need:

  • 1 yellow onion; diced
  • 1 bell pepper; diced
  • Optional- minced jalapeno
  • 4 garlic cloves; minced
  • 3 cups cooked shredded chicken
  • 6 cups low sodium vegetable or chicken broth
  • 1 can of corn; drained
  • 1 can of black beans; drained and rinsed
  • 1 can fire roasted tomatoes
  • 1/2 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 tablespoon chili powder
  • 1 lime; juiced
  • Salt and pepper to taste
  • Toppings: queso fresco cheese, sliced jalapeño, chopped avocado, cilantro, tortilla strips


Directions: 

  1. In a large pot heat up 2 tablespoons of avocado oil, add onions, bell pepper and jalapeño. Cook for a few minutes until softened
  2. Add garlic, cook for one more minute
  3. Add the rest of the ingredients
  4. Bring to a boil
  5. Lower heat to medium, allow to boil gently for at least 5 minutes
  6. Add toppings, serve and enjoy!
