Chicken tortilla soup. Such an easy crowd pleasing weeknight meal that comes together in 30 minutes!
Here's what you need:

1 yellow onion; diced

1 bell pepper; diced

Optional- minced jalapeno
-
4 garlic cloves; minced
-
3 cups cooked shredded chicken

6 cups low sodium vegetable or chicken broth
-
1 can of corn; drained
-
1 can of black beans; drained and rinsed
-
1 can fire roasted tomatoes
-
1/2 teaspoon cumin
-
1 teaspoon smoked paprika
-
1 tablespoon chili powder
-
1 lime; juiced
-
Salt and pepper to taste

Toppings: queso fresco cheese, sliced jalapeño, chopped avocado, cilantro, tortilla strips
Directions:

In a large pot heat up 2 tablespoons of avocado oil, add onions, bell pepper and jalapeño. Cook for a few minutes until softened

Add garlic, cook for one more minute

Add the rest of the ingredients

Bring to a boil

Lower heat to medium, allow to boil gently for at least 5 minutes

Add toppings, serve and enjoy!
