Creamy Lemon Spaghetti

This Creamy Lemon Spaghetti is an easy 20 minute weeknight meal!

 

Here's what you'll need:

  • 1lb spaghetti
  • 1 pint cherry tomatoes; halved
  • 1 5 oz bag spinach; chopped
  • 4 garlic cloves; minced
  • 1 shallot; diced
  • 1/3 cup vegetable broth
  • 2 cups half and half
  • 3 lemons; juiced (about 1/3 cup)
  • 1 tablespoon Italian seasoning
  • Pinch of crushed red pepper
  • Salt & pepper to taste

 Instructions: 

  1. Cook pasta; reserve 1 cup of cooking liquid
  2. In a large skillet, Heat 2 olive oil over medium heat
  3. Add shallot, cook a few minutes until translucent
  4. Add garlic, cook 1 minute
  5. Add Italian seasoning and crushed red pepper, pour in broth, simmer for a couple minutes
  6. Pour in cream, lemon juice, salt and pepper
  7. Bring to a boil, lower heat to a simmer, cook for 5-10 minutes until sauce thickens, stir frequently
  8. Add in cheese, pasta, spinach and tomatoes
  9. Toss to combine
  10. Cover with lid, let sit covered for 3-5 minutes until spinach wilts
  11. Add in reserved pasta water if sauce is too thick
  12. Enjoy!
