This Creamy Lemon Spaghetti is an easy 20 minute weeknight meal!
Here's what you'll need:

1lb spaghetti

1 pint cherry tomatoes; halved

1 5 oz bag spinach; chopped

4 garlic cloves; minced

1 shallot; diced

1/3 cup vegetable broth

2 cups half and half
-
3 lemons; juiced (about 1/3 cup)

1 tablespoon Italian seasoning

Pinch of crushed red pepper

Salt & pepper to taste
Instructions:
- Cook pasta; reserve 1 cup of cooking liquid
- In a large skillet, Heat 2 olive oil over medium heat
- Add shallot, cook a few minutes until translucent
- Add garlic, cook 1 minute
- Add Italian seasoning and crushed red pepper, pour in broth, simmer for a couple minutes
- Pour in cream, lemon juice, salt and pepper
- Bring to a boil, lower heat to a simmer, cook for 5-10 minutes until sauce thickens, stir frequently
- Add in cheese, pasta, spinach and tomatoes
- Toss to combine
- Cover with lid, let sit covered for 3-5 minutes until spinach wilts
- Add in reserved pasta water if sauce is too thick
