Hands down one of my most made dishes, and at the top of my all time favorites list. This dish serves so many purposes from a quick weeknight go-to to a stress free dinner party entree, this salmon is so delicious and elevated that no one would never know it only took about 20 minutes to make. Complete the meal and add your choice of potatoes and vegetables to the same sheet pan. So easy!
Ingredients:

1 pound of Salmon

1/4 cup Dijon mustard

2 tablespoons honey
-
3 tablespoons melted mutter
-
1/4 cup plain Greek yogurt
-
1/2 cup finely chopped pecans
-
1/2 cup panko breadcrumbs
-
1/4 cup chopped fresh parsley
-
Salt and pepper to taste

Preheat oven to 425°
-
Make honey mustard sauce: In a small bowl, mix Dijon mustard, honey, 2 tablespoons of melted butter, and green yogurt

Add salt and pepper to taste

Set aside until ready to use

Make pecan panko crumb topping- Put pecans in a ziploc bag and smash them until finely ground like a panko bread crumb consistency

In a small bowl, mix the the crushed pecans, panko and parsley

Pat salmon dry and season with salt and pepper

Spread honey mustard mixture generously over salmon filets

Press pecan panko mixture into salmon filets

Drizzle remaining 1 tablespoon of melted butter on top of salmon

Bake at 425°F for 15 minutes or until salmon is cooked through
