Whether enjoyed as a quick weeknight dinner or served as a standout dish for special occasions, shrimp fajita pasta is sure to be a hit!
Ingredients:
- 1 lb rigatoni (or pasta of choice)
- 1 lb of shrimp; peeled and deveined
- 1 onion; sliced
- 1 red bell pepper; sliced
- 1 green bell pepper; sliced
- 4 cloves minced garlic
- 2 tablespoons butter
- 1 tablespoon avocado oil or EVOO
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 tablespoon oregano
- Salt and pepper to taste
- 1 cup sour cream
- 1-2 limes (your preference)
- 1/4 cup Queso fresco
Cooking Instructions:
- Cook pasta according to box directions, reserve at least 1 cup of the pasta cooking water
- Season shrimp with blackened seasoning
- Heat 2 tablespoons of butter on medium high heat in a large skillet
- Cook shrimp a couple minutes on each side (until cooked through)
- Remove shrimp from skillet
- Add 1 tablespoon of avocado oil to the same skillet, add in peppers and onions
- Cook for 3-5 minutes until softened, then add minced garlic and seasonings
- Cook another 1-2 minutes
- Add pasta to skillet, 1 cup reserved pasta cooking water and sour cream
- Stir to mix and coat everything evenly in the sauce
- Squeeze in some lime juice and top with crumbled queso fresco
