Shrimp Fajita Pasta

 Whether enjoyed as a quick weeknight dinner or served as a standout dish for special occasions, shrimp fajita pasta is sure to be a hit!

Ingredients:

  • 1 lb rigatoni (or pasta of choice)
  • 1 lb of shrimp; peeled and deveined
  • 1 onion; sliced
  • 1 red bell pepper; sliced
  • 1 green bell pepper; sliced
  • 4 cloves minced garlic
  • 2 tablespoons butter
  • 1 tablespoon avocado oil or EVOO
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 tablespoon oregano
  • Salt and pepper to taste
  • 1 cup sour cream
  • 1-2 limes (your preference)
  • 1/4 cup Queso fresco

Cooking Instructions:
  1. Cook pasta according to box directions, reserve at least 1 cup of the pasta cooking water
  2. Season shrimp with blackened seasoning
  3. Heat 2 tablespoons of butter on medium high heat in a large skillet
  4. Cook shrimp a couple minutes on each side (until cooked through)
  5. Remove shrimp from skillet
  6. Add 1 tablespoon of avocado oil to the same skillet, add in peppers and onions
  7. Cook for 3-5 minutes until softened, then add minced garlic and seasonings
  8. Cook another 1-2 minutes
  9. Add pasta to skillet, 1 cup reserved pasta cooking water and sour cream
  10. Stir to mix and coat everything evenly in the sauce
  11. Squeeze in some lime juice and top with crumbled queso fresco
