Here's what you'll need:

1 12 oz bag frozen butternut squash

1 cup chopped tomatoes

1 cup chopped onion

1 teaspoon garlic powder (I usually prefer fresh garlic but I was out!)

1 tablespoon Italian seasoning

Pinch crushed red pepper

Salt and pepper to taste

1/2 cup grated Parmesan cheese

1/3 cup cream
-
1 pound of gnocchi or pasta of choice
Directions:

Toss squash, onions and tomatoes in seasonings and olive oil

Bake at 450 for 20 mins

While veggies are roasting make gnocchi according to package directions; reserve 1 cup of pasta cooking liquid

Blend with reserved 1 cup pasta water

Add Parmesan cheese and cream, blend again until smooth

Pour over gnocchi or pasta of choice
