Butternut Squash Sauce

Here's what you'll need: 

  • 1 12 oz bag frozen butternut squash

  • 1 cup chopped tomatoes

  • 1 cup chopped onion

  • 1 teaspoon garlic powder (I usually prefer fresh garlic but I was out!)

  • 1 tablespoon Italian seasoning

  • Pinch crushed red pepper

  • Salt and pepper to taste

  • 1/2 cup grated Parmesan cheese

  • 1/3 cup cream

  • 1 pound of gnocchi or pasta of choice

Directions:

  1. Toss squash, onions and tomatoes in seasonings and olive oil

  2. Bake at 450 for 20 mins

  3. While veggies are roasting make gnocchi according to package directions; reserve 1 cup of pasta cooking liquid

  4. Blend with reserved 1 cup pasta water

  5. Add Parmesan cheese and cream, blend again until smooth

  6. Pour over gnocchi or pasta of choice
