Here’s an easy and fun way to step up your spaghetti and meatball game. To make this super easy, I used Italian seasoned Panko breadcrumbs, but you can also use plain breadcrumbs and add your own Italian seasoning. Also, @lidiabastianich pasta sauce is my new favorite and better than Raos. Just throwing that out there. I had mine over zucchini noodles, my boyfriend had his over spaghetti. Today we’re having the leftovers on a roll. Do you boo 😘
Here's what you'll need:

1 lb ground chicken

Mozzarella balls

1/3 cup Parmesan cheese

1/3 cup Italian seasoned Panko breadcrumbs

1/4 cup chopped fresh parsley
-
1 egg
-
Salt & pepper to taste

2 tablespoons olive oil
-
1-2 jars pasta sauce (depends on how saucey you like it)

1/4 cup flour (more or less, just use as needed)

Fresh Basil - optional
Directions:

Preheat oven to 350
-
In a large bowl, mix breadcrumbs, Parmesan cheese, parsley, S & P, and egg.

Once combined, add in ground chicken and mix

Roll into ping pong size balls

Press a hole into center of each meatball, fill with mozzarella ball, then roll to cover the cheese

Roll each ball in a thin layer of flour
-
Heat olive oil in an oven safe pan on medium high heat

Add meatballs to pan and cook about 4 minutes until browned all over, move your pan around constantly to make sure they are cooking evenly

Remove meatballs from pan, do a quick wipe of the pan to remove excess oils

Pour in a jar of your favorite pasta sauce to the pan, add meatballs back in

Bake in oven for about 20 minutes until cooked through

Sprinkle with fresh basil

Serve over pasta, zoodles, make a sandwich, whatever floats your boat
