Here's what you'll need:
- 1lb salmon; cut into nugget sized pieces
- 2 cups flour
- 2 cups panko
- 1-2 cups shredded coconut
- 2 eggs
- smoked paprika
- salt & pepper to taste
- coconut oil cooking nonstick spray
Directions:
- in 3 separate bowls- season flour with salt and pepper; whisk egg and pinch of smoked paprika; mix panko and coconut shreds with 1 tsp smoked paprika
- pat salmon dry, cut into nugget sized cubes
- coat salmon nuggets with seasoned flour mixture
- dip in egg mixture
- coat salmon in coconut/panko mix
- spray with coconut oil
- Air fry for 5-7 minutes at 400° each side (or until cooked through and coconut panko crust is golden)- shake halfway through
Baking instructions: 400° for 5 minutes on each side
Notes: add as much or as little coconut as you'd like; pairs well with sweet chili sauce
