Coconut Crusted Salmon Nuggets

Here's what you'll need:

  • 1lb salmon; cut into nugget sized pieces
  • 2 cups flour
  • 2 cups panko
  • 1-2 cups shredded coconut
  • 2 eggs
  • smoked paprika
  • salt & pepper to taste
  • coconut oil cooking nonstick spray

Directions:

  1. in 3 separate bowls- season flour with salt and pepper; whisk egg and pinch of smoked paprika; mix panko and coconut shreds with 1 tsp smoked paprika 
  2. pat salmon dry, cut into nugget sized cubes
  3. coat salmon nuggets with seasoned flour mixture
  4. dip in egg mixture
  5. coat salmon in coconut/panko mix
  6. spray with coconut oil
  7. Air fry for 5-7 minutes at 400° each side (or until cooked through and coconut panko crust is golden)- shake halfway through

Baking instructions: 400° for 5 minutes on each side

Notes: add as much or as little coconut as you'd like; pairs well with sweet chili sauce
