Creamy Roasted Red Pepper Penne & Shrimp

This Creamy Roasted Red Pepper Penne & Shrimp is an elevated but easy meal that would be perfect for a Valentine’s Day dinner at home! Here's what you'll need:

  • 1 cup of roasted red peppers (homemade or store bought in a jar)

  • 8 jumbo shrimps; peeled & deveined

  • 1 teaspoon Italian seasoning

  • 1 tablespoon lemon pepper

  • 1 teaspoon garlic powder

  • Salt & pepper to taste

  • Extra virgin olive oil

  • 1 medium shallot; minced

  • 4-6 garlic cloves; minced

  • 1/4 cup parmesan cheese

  • 1/2 cup half & half

  • 1 lb penne

Directions:

  1. Blend roasted red peppers with 1 tablespoon of olive oil & salt and pepper to taste; set aside until ready to use

  2. Season shrimp with lemon pepper, garlic powder, salt & pepper

  3. In a large skillet on medium heat, heat 1 tablespoon of olive oil

  4. Cook shrimp a couple minutes on each side or until cooked through

  5. Once cooked through remove shrimp from skillet

  6. Add another tablespoon of olive oil, cook shallots & garlic for a few minutes until softened then add Italian seasoning

  7. Stir & cook one minute

  8. Pour in red pepper sauce & optional 1/4 cup of red wine

  9. Simmer for 3 minutes

  10. Add in cheese and cream, stir until heated through

  11. Reserve one cup of the pasta cooking liquid before draining penne, add to sauce

  12. Add in penne and shrimp

  13. Top with fresh parsley or basil
