This Creamy Roasted Red Pepper Penne & Shrimp is an elevated but easy meal that would be perfect for a Valentine’s Day dinner at home! Here's what you'll need:

1 cup of roasted red peppers (homemade or store bought in a jar)

8 jumbo shrimps; peeled & deveined

1 teaspoon Italian seasoning

1 tablespoon lemon pepper

1 teaspoon garlic powder
-
Salt & pepper to taste

Extra virgin olive oil
-
1 medium shallot; minced
-
4-6 garlic cloves; minced
-
1/4 cup parmesan cheese
-
1/2 cup half & half
-
1 lb penne
Directions:

Blend roasted red peppers with 1 tablespoon of olive oil & salt and pepper to taste; set aside until ready to use

Season shrimp with lemon pepper, garlic powder, salt & pepper

In a large skillet on medium heat, heat 1 tablespoon of olive oil

Cook shrimp a couple minutes on each side or until cooked through

Once cooked through remove shrimp from skillet

Add another tablespoon of olive oil, cook shallots & garlic for a few minutes until softened then add Italian seasoning

Stir & cook one minute

Pour in red pepper sauce & optional 1/4 cup of red wine

Simmer for 3 minutes

Add in cheese and cream, stir until heated through

Reserve one cup of the pasta cooking liquid before draining penne, add to sauce

Add in penne and shrimp
-
Top with fresh parsley or basil
