Lasagna Soup

Here's what you'll need:

  • 1 onion; diced 

  • 4-6 garlic cloves; minced 

  • 1 pound Italian chicken sausage 

  • 1 jar of your favorite pasta sauce 

  • 1 can of diced tomatoes 

  • 8 cups veg broth (preferably low sodium) 

  • ½ cup cream (I use half & half but any milk or cream works!) 

  • 1 lb whole grain pasta 

 Directions:

  1. In a large pot, heat 1 tablespoon of olive oil over medium heat 

  2. Add onions; cook for a few minutes until soft and translucent then add garlic and a pinch of crushed red pepper, cook 1 more minute 

  3. Add chicken sausage 

  4. Once chicken sausage is cooked through add 3 tablespoons of tomato paste, stir to combine, cook for 2 minutes 

  5. Add pasta sauce, diced tomatoes and broth 

  6. Bring to boil, lower heat to simmer; simmer for 5 minutes 

  7. Taste test, add salt pepper italian seasoning or crushed red pepper as needed 

  8. Pour in half and half, stir to mix then add in pasta 

  9. Simmer for 15 minutes; stirring occasionally until pasta is cooked 

  10. While soup is simmering, make ricotta mixture 

  11. Ricotta mixture=in a small bowl mix ½ cup ricotta, ¼ cup shredded mozzarella, ¼ cup grated parmesan, pinch of ½ teaspoon of italian seasoning, salt and pepper to taste 

  12. To serve, top each soup bowl with ricotta mixture, fresh basil and parsley 

  13. Enjoy!
