Here's what you'll need:

1 onion; diced

4-6 garlic cloves; minced

1 pound Italian chicken sausage

1 jar of your favorite pasta sauce

1 can of diced tomatoes
-
8 cups veg broth (preferably low sodium)

½ cup cream (I use half & half but any milk or cream works!)

1 lb whole grain pasta
Directions:

In a large pot, heat 1 tablespoon of olive oil over medium heat

Add onions; cook for a few minutes until soft and translucent then add garlic and a pinch of crushed red pepper, cook 1 more minute

Add chicken sausage

Once chicken sausage is cooked through add 3 tablespoons of tomato paste, stir to combine, cook for 2 minutes

Add pasta sauce, diced tomatoes and broth

Bring to boil, lower heat to simmer; simmer for 5 minutes

Taste test, add salt pepper italian seasoning or crushed red pepper as needed

Pour in half and half, stir to mix then add in pasta

Simmer for 15 minutes; stirring occasionally until pasta is cooked

While soup is simmering, make ricotta mixture
-
Ricotta mixture=in a small bowl mix ½ cup ricotta, ¼ cup shredded mozzarella, ¼ cup grated parmesan, pinch of ½ teaspoon of italian seasoning, salt and pepper to taste

To serve, top each soup bowl with ricotta mixture, fresh basil and parsley
