This Lemon Chicken Orzo Soup is the perfect soup recipe to make on Sundays for the week!
What you'll need:

2 tablespoons extra virgin olive oil

1 cup carrots; diced

1 cup celery; diced

1 cup onion; diced
-
4-6 cloves garlic; minced
-
6-8 cups chicken broth (depends on how brothy you like it)

2 teaspoons Italian seasoning
-
1 tablespoon hot sauce (optional)

1/4 cup fresh lemon juice
-
3/4 cup orzo
-
2 cups cooked chicken (shredded or chopped)

Chopped fresh spinach (a couple handfuls)

3 egg yolks
-
Salt & pepper to taste

1 tablespoon fresh parsley
-
1 teaspoon fresh dill
Directions:

In a large pot- heat olive oil over medium heat

Add onions, carrots & celery. Cook for 5 minutes until softened

Add garlic, cook 1 minute then add Italian seasoning, salt and pepper

Pour in chicken broth, bring to a rolling boil

Add lemon juice, orzo and hot sauce if using, lower heat and simmer 10 minutes (follow instructions on your orzo pasta package)

Add cooked chicken

While soup is simmering, separate 3 egg yolks into a small mixing bowl, measure out about 1 cup of the hot broth & pour into the egg yolk bowl while whisking, then pour into soup

Stir, taste test to see if it needs more salt or pepper & to make sure orzo is cooked

Add in chopped spinach and fresh herbs if using
