Nothing says vacation like a classic pina colada...one sip and you are instantly transported to an island vacation. Here's how to make this classic frozen tropical cocktail without leaving the comfort of your own home, but still feel like you're on a relaxing holiday getaway. I amp mine up with a dark rum floater on top, if you do not like the strong taste of the rum on top, feel free to blend all of the ingredients together.
2 cups frozen pineapple chunks
3 oz pineapple juice
2.5 oz cream of coconut
2 oz white rum
ice as needed - around 1 cup
3 oz dark rum (1.5 oz for each glass)
Blend all ingredients except for the dark rum
Add as much or as little ice as you need to get the pina colada to the slushy consistency you like
Pour into glass
Use the back of a spoon to pour the dark rum floater on top
Garnish with fresh pineapple slice
