Vegetable Lo Mein

Here's what you'll need: 

  • 1 lb whole wheat spaghetti
  • 1 cup sliced onion
  • 1 cup sliced bell peppers
  • 3 garlic cloves; minced
  • 1 cup chopped broccoli
  • 1 cup baby corns
  • 1/2 cup green onions; sliced

 

Sauce Ingredients:

  • 1 tsp ginger paste
  • 1/3 cup coconut aminos or soy sauce
  • 2 Tbsp cornstarch
  • 1 Tbsp rice wine vinegar
  • 1 Tbsp coconut palm sugar or brown sugar
  • 1/3 cup (big splash) water
  • 2 Tbsp sesame oil
  • 1 Tbsp avocado oil

Directions:

  1. Prep ingredients
  2. For sauce- add ingredients to a mason jar and shake until mixed well
  3. bring pot of water to a boil
  4. while waiting for water to boil, heat avocado oil in a large pan on medium heat
  5. add bell peppers and cook for 5 minutes, add garlic, cook and stir for 1 min
  6. cook pasta according to box recipe
  7. add broccoli, sesame oil to pepper & onion mixture, cook for a couple of minutes, then add in baby corns and sauce- stir to combine
  8. When pasta is cooked to your liking, add it directly from boiling water to veggie sauce mixture pan
  9. toss to coat noodles in sauce
  10. top with green onions, sesame seeds & siracha
