Here's what you'll need:
- 1 lb whole wheat spaghetti
- 1 cup sliced onion
- 1 cup sliced bell peppers
- 3 garlic cloves; minced
- 1 cup chopped broccoli
- 1 cup baby corns
- 1/2 cup green onions; sliced
Sauce Ingredients:
- 1 tsp ginger paste
- 1/3 cup coconut aminos or soy sauce
- 2 Tbsp cornstarch
- 1 Tbsp rice wine vinegar
- 1 Tbsp coconut palm sugar or brown sugar
- 1/3 cup (big splash) water
- 2 Tbsp sesame oil
- 1 Tbsp avocado oil
Directions:
- Prep ingredients
- For sauce- add ingredients to a mason jar and shake until mixed well
- bring pot of water to a boil
- while waiting for water to boil, heat avocado oil in a large pan on medium heat
- add bell peppers and cook for 5 minutes, add garlic, cook and stir for 1 min
- cook pasta according to box recipe
- add broccoli, sesame oil to pepper & onion mixture, cook for a couple of minutes, then add in baby corns and sauce- stir to combine
- When pasta is cooked to your liking, add it directly from boiling water to veggie sauce mixture pan
- toss to coat noodles in sauce
- top with green onions, sesame seeds & siracha
