These Zucchini Lasagna Roll-Ups are an easy healthy dinner!
Here's what you'll need:

2-3 large zucchini; sliced 1/4 inch width

Pasta sauce; about 2 cups

Ricotta; about a cup

1 pound of ground protein of choice (I use turkey or chicken)

1-2 tablespoons of seasoning (I normally use Italian seasoning but I was out so I just used oregano!)
Directions:

Preheat oven to 400

Lay sliced zucchini on baking pan; sprinkle with salt & give a light spray with oil

Bake 10 minutes (this baking process softens the zucchini and helps it roll easier)

Once zucchini is cooked, remove from oven and set aside to cool

While zucchini is baking, Cook protein (if using).

Heat 1 tablespoon of oil on medium high heat, add ground chicken & seasoning, cook until chicken is cooked through

Assemble Roll-Ups

Pour 1 cup of sauce onto bottom of baking dish

Spread about 1-2 tablespoons of ricotta on zucchini

Spread about 1 tablespoon of sauce, then protein
-
Roll & repeat

Top with shredded mozzarella

Bake 20-25 minutes until cheese is melted

Broil 2 minutes to get cheese golden brown
